Now we are packing our bags for Tauranga which will be quickly followed by Queen's Birthday weekend in New Plymouth. Looks like two busy weeks ahead. Hope to see you at one of these shows.

Blackened Chicken Or Fish

Blackened Chicken Or Fish 4 Servings
1-2 tablespoons (to taste) Bittersweet Cajun Blend**
salt and pepper to taste
2 whole, skinless boneless chicken breasts cut into similar size pieces (or 4 fish fillets)
spray oil

Mix Bittersweet Cajun and salt and ground pepper (if using) in a shallow dish. Place chicken in an airtight plastic bag and spray with oil, toss to coat. Sprinkle in Cajun Blend and shake again to coat. Bake on greased baking sheet (best for fish) or sauté, or grill.  If you sauté keep the temperature of the frying pan lower and it won't smoke or blacken. Save the "blacken" for the outside grill.

**You can use Bittersweet Chili, Curry, Tandoori, Zesty Garlic or Sundried Tomato/Horseradish in this recipe.
