Cajun Spiced Baked Potato Wedges

Spicy Potato Wedges for 4
6 medium potatoes (approx 800g)
1 tablespoon of oil
1 tablespoon Bittersweet Cajun Blend
½ cup fine, dry breadcrumbs
salt to taste

oven_roast_potatoes_1_1.JPG     Prepare potatoes (approx 800g) by washing, drying and cutting into approx 15mm wedges. Place potatoes in a plastic bag (check for holes first!), pour in 1 tablespoon of oil and shake to coat. Mix 1 tablespoon Cajun Blend with 1/2 cup fine, dry breadcrumbs and put into bag with potatoes and toss to coat again. Tumble all out onto a baking sheet and try to make one layer. Bake 180° for about 40 minutes, turning occasionally. Season with salt to taste.
This recipe can be endlessly varied. For example you can use different oils such as sesame seed or lemon infused oil. Use sesame seeds instead of breadcrumbs, or use crushed cornies or bran flakes. Another change is to use kumara wedges. Remember, though, that if you are mixing white potatoes and kumara that kumara cooks much quicker. So you can make the kumara wedges larger or make them the same size, but add them to the oven later.
