Mulled Apricot Cream

  • Serve this desert by itself or over/with ice cream.
  • Use it as a filling in pastries or a surprise inside a muffin.
  • Add a bit of brandy or rum at the end for an adult treat.
  • Soften (plain vanilla? hokey pokey?) ice cream, about ½ litre (about 40 seconds in microwave) and swirl about a cup of Mulled Apricot Cream about and re-freeze. Holy Cow!

Mulled Apricot Cream Serves 4

250g dried apricots
approx. 1½ cups Bittersweet Mulled apple juice, enough to cover
50g-slivered almonds, lightly toasted
150ml whipped cream or ice cream for four servings

     Cover apricots with mulled juice and simmer until soft, about 15 minutes. Allow to cool. Puree apricots and juice in blender or food processor. Stir in almonds. Pour in bowl and chill. Serve with cream or ice cream.
