Upside Down Date Pudding

Upside Down Date Pudding       Serves 6 to 8
160g pitted dates
2 tablespoons butter
2 ½ Cups boiling Bittersweet Mulled Apple Juice (divided)
1 egg
1 ½ Cups flour
½ cup white sugar
1 cup lightly packed brown sugar (divided)
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup broken walnuts

     Preheat oven to 180°.Snip dates into a 20cm baking dish. Add butter. Pour 1 cup boiling Bittersweet spiced apple juice over dates and stir to melt butter and soften dates. In a medium bowl mix egg, flour, white sugar, ½ cup brown sugar, baking soda & powder, salt and walnuts until thoroughly blended. Smooth evenly over dates and sprinkle with remaining brown sugar. Slowly pour 1 ½ cups boiling Bittersweet spiced apple juice over all. Bake 40 minutes at 180°.


     Serve warm with ice cream.
