Helping Healthy Food Guide

      We have supported the New Zealand Healthy Food Guide since it's inception. The October issue's cover recipe was just asking to be made, but we couldn't resist adding our personal Bittersweet touch. So instead of adding the mint we added a tablespoon of our So Savoury Blend and for the Salsa we added 1 good teaspoon of our Bittersweet Heathen Chili Blend.  Not to leave anything done by half we also added a tablespoon of our Dilly Dill Blend to 250g of yoghurt for the garnish.  It gave a nice, cooling taste.  A small recommendation is to add the egg to the vegetables and combine and then sprinkle the flour over and mix in. Then divide the batter into six equal "pancake" portions for cooking.  You will probably like to add salt and pepper to taste as our Blends do not contain any salt.

TIP: Store all your ground spices in your refrigerator - especially curry blends, chilli powders, paprika and turmeric.

We recommend using Tatua sour cream as it won't curdle or separate when cooked.  Look for it (or ask for it if they don't carry the sour cream) in New World Supermarkets.

October Tip...

     SALTING MEAT...
      The myth is that you should never salt red meat before cooking as it will cause juices to seep out and make the meat tough and less juicy. 
      The fact is that if red meat is let sit with a coating of salt on it, it does cause a small amount of juice to leak out after a few minutes.  But after about 20 minutes the juice begins to be reabsorbed, and it is completely reabsorbed after about two hours. If you salt raw meat closer to cooking time, it will lose a very small amount of juice, but since most cooks use a relatively small amount of salt the effect is close to negligible. So you can pretty much do as you like as far as salting red meat without ruining the meat either way.
    The choice of salt??...Use our unprocessed, unadulterated, natural New Zealand solar evaporated sea salt. It has the natural sweetness of the sea and no added greebles.  If you are concerned about iodine use our lovely salt which has seaweed added for iodine. Be salt wise.
