Parmesan Seed Wafers

Parmesan Seed Wafers    Make approx 30

1/2 cup each pumpkin and sunflower seeds (70g ea)
1/4 cup sesame seeds (20g)
2 teaspoons Bittersweet Cajun Cookin' Blend (can also use Chili, Zesty Garlic, Savoury, Tandoori or Curry)
100g grated Parmesan cheese (already grated Mainland works a treat)

   Preheat oven to 200 and line 2 or 3 baking trays or broiler pans with baking paper.  Mix all the above ingredients well in a small bowl, really scooping up from the bottom to incorporate the Cajun Blend.  Distribute by soup spoons onto the baking paper (they don't spread when cooking) and try to contain equal amounts of seeds and cheese. It helps to mix the ingredients often as the Cajun falls to the bottom. Bake about 10 minutes until they are melted and only just turning brown. Do not answer the phone.  Cool before removing from baking paper and store in a sealed container until party time.  Watch them disappear!
