This salad goes well with a salad platter or anything spicy like a curry.
Bean, Yoghurt & Cucumber Salad 6 Servings
1 tin (300g) four-bean mix
2 cups yoghurt or sour cream
1 cucumber, seeded and diced
1/4 cup finely chopped spring onion
1/4 cup sunflower seeds (optional)
2 teaspoon Bittersweet Herb Farm Dilly Dill Blend **
Drain and rinse tinned beans thoroughly then let dry slightly. In medium bowl mix yoghurt (or sour cream) with Bittersweet Dill Blend. Add remaining ingredients. Chill.
**May substitute Bittersweet Zesty Garlic, Italian, Savoury Or Tarragon
