Crock Pot Corned Beef** With Mulled Juice
1.5 kg corned beef (**or pickled pork), rinsed (one to fit nicely in your slow cooker or pot)
2 cups Bittersweet Mulled Juice
,*** any flavour (even tomato in this case)
1 large onion, chopped
Few celery pieces or tops (keep some in freezer for this use)
Place corned beef in crock-pot, fat side up. Add remaining ingredients. Cover and cook for 7 hours or according to manufacturer’s instructions.
You can also cook your potatoes, cabbage and carrots in spiced apple juice as this gives a nice relationship to the ingredients. Serve all with good, hot mustard.
*** Can also use un-spiced juice, and then add a good tablespoon of Bittersweet Mulling spices
to the pot. If you will be using the juice again, say to cook the potatoes or carrots, then you will want to put the spices in a tea ball or in a calico bag.
