Cottage Cheese Topping for Baked Potatoes
1 250g container low fat cottage cheese
2 teaspoons minced red onion
2 tablespoons grated Parmesan cheese
1 tablespoon Bittersweet Italian Blend*
1 tablespoon chopped parsley
Mix all together in a small bowl. For best flavour, cover and refrigerate for one hour or more.
*Can also use Any Bittersweet Blend in this recipe
