Courgette, Cheese and Tomato Fritters

Courgette, Cheese and Tomato Fritters    Makes about 50 cocktail size

1 cup flour
2 teaspoons baking powder
1 tablespoon Bittersweet Italian Blend
salt and pepper to taste
2 eggs
1 cup milk
130g grated courgettes
1/3 cup chopped chives
90g grated Tasty
90g chopped semi dried tomatoes
oil for cooking

    Combine flour, baking powder, Italian Blend, salt and pepper.  Beat eggs and milk, then add to flour mixture to form a batter.  Squeeze as much juice from courgettes as possible and add them plus the remaining ingredients to the batter. Stir to just combine.  Drop by dessert spoonfuls into hot, prepared skillet and cook both sides until golden. Serve warm with your favourite chutney.
