Easy Italian Tomato Pasta Sauce...Serves 4
1/2 cup chopped onion, sauté until clear
1/2 cup sliced mushrooms, sauté until limp. Reserve liquid.
1 cup broccoli, cut into small florets and par steamed.
1/2 cup carrots, thinly sliced and par steamed (can steam on top of broccoli)
1 410g tin crushed tomato
1 teaspoon sugar
1 teaspoon Bittersweet Zesty Garlic (or fresh garlic to taste)
2 tablespoons Bittersweet Italian Blend (or to taste)
salt and pepper to taste
Sauté and cook vegetables. Combine tomato, sugar, and vegetables. Heat through. Just before serving add Italian and Zesty Garlic blends, salt and pepper to taste and simmer a few minutes (or make early in day, add seasonings, refrigerate and reheat for dinner). Serve over linguine and garnish with grated cheese.
