Pizza at Home
Quantities vary greatly for numbers of people so make more rather than less. Leftover pies can be warmed up the next day in a hot skillet (no microwave). Also watch the weight of toppings on thinner bases such as tortillas or Naan bread.

Sauce for Base
This sauce will cover 8 bases of regular (approx 20cm) tortilla rounds. Make sauce early in the day for flavours to marry.
1 400g tin crushed tomato
1½ tablespoons Bittersweet Italian or Mexican Blend
1 medium onion, diced

    Stir all together and refrigerate until ready to use.

To assemble:  Spread bases rather lightly with sauce. Top with preferred toppings, but finish with grated cheese on top.
Bake on a baking sheet in a hot 220° oven until the cheese bubbles.

Some toppings you might like are:  sliced mushrooms (cooked or raw), salami, pepperoni, ham, olives, sundried tomatoes, leftover sliced steak, leftover meat loaf (it's like meatballs!), diced capsicum, roasted veggies, tunafish, capers, sliced and cooked sausages, caramelised onions, etc.

Some cheeses to use: Edam or colby are the choice for lowest fat, tasty, feta, blue (crumbled), gruyere, Emmenthal, Swiss, fried Haloumi, your favourite!
