Devil's Curry Broccoli and Cheese Bake serves 4 as a main or 6-8 as a side
2 medium heads of broccoli, cut into florets
250g ricotta cheese (can use low fat)
1/2 cup grated cheese, divided (Edam or tasty)
2 teaspoons cornflour
1 tablespoon Bittersweet Devil'd Island Curry Blend
3 tablespoons milk
2 spring onions, chopped (some green included)
1 cup crushed corn chips
Preheat oven to 180.
Blanch broccoli florets in boiling water for about 5 minutes and then coarsely chop. In a small bowl beat the eggs, then mix in the ricotta and grated cheese. Combine the cornflour, Curry Blend and milk and then add it to the egg mixture. In a larger bowl mix the egg mixture and the broccoli and salt to taste. Pour all into a prepared baking dish. Bake 30 minutes. Meanwhile mix the remaining 1/4 cup of grated cheese with the cup of corn chips. Sprinkle over top of your hot dish and grill until cheese has just melted. Watch closely.
