Gimme More Meat Loaf Serves 6
1 large egg, beaten
1 large onion, diced and sauted until clear
1½ tablespoons Bittersweet Devil’s Island Curry Blend
1 cup bread crumbs, fresh or packaged
500g pork mince
500g lean beef mince
¼ cup of water and ¼ cup of milk, mixed
Preheat oven to 180°C. Lightly mix egg, bread crumbs, onion and Curry Blend Add pork mince and blend again. Then add beef mince and mix that together. Add enough milk and water until moist. Add more liquid if too dry. Form into loaf and bake in a 20x30 cm baking dish for 30 minutes. Meanwhile make the sauce:
¼ cup water
½ cup tomato or Bar B Que sauce
½ cup Worcestershire sauce
1 tablespoon Bittersweet Devil’s Island Curry
Simmer in saucepan for 2 -3 minutes.
After 30 minutes drain fat and juices from baking dish. Pour sauce over meatloaf and bake for an additional 35 minutes.
This meatloaf makes wonderful sandwiches.
