Crust-Less Quiche

Crust-Less Quiche  Serves 4

Prepare a quiche dish (approx 22cm) or large pie dish with oil spray.
2 tablespoons fine dried breadcrumbs
1 cup (125 g) chopped onion
1 tablespoon butter (or similar)
1 cup (200g) diced, cooked ham (Champagne is best)
2 (225g) cups grated Swiss type cheese
4 large eggs (size 8)
1 cup heavy cream
1 cup milk
1 1/2 tablespoon Bittersweet So Savoury Blend
Nutmeg for garnish

Preheat oven to 220. Sprinkle bread crumbs in bottom of prepared dish and swirl about to coat. Cook onions in butter until pale and golden and add ham. Stir to combine. Gently place onion and ham in bottom of pie dish and sprinkle with cheese. In a separate bowl whisk cream, milk and Bittersweet Blend together. Pour over pie dish and press down on any cheese. Sprinkle top with nutmeg.  Bake 25 minutes. Let set for 5 minutes before cutting and serving.
