Crustless Ham and Cheese Pie

Crustless Ham and Cheese Pie        Serves 8

1 tablespoon butter, softened PLUS 2 tablespoons, melted
45g FINELY grated Parmesan Cheese (as fine as you can make it)
200g Gruyere Cheese, shredded
125g shaved ham or Champagne Ham cut into tiny pieces
4 spring onions, minced
70g all purpose flour
1½ tablespoons Bittersweet So Savoury Blend
¾ teaspoon baking powder
pinch of salt
2/3 cup buttermilk or trim milk
1/3 cup cream
4 large eggs, lightly beaten
2 teaspoons Dijon Mustard
½ teaspoon nutmeg
salt and pepper to taste

     Heat oven to 180º and position rack to lowest position. Prepare a 20cm oven dish (or pie plate) with softened butter and then coat it evenly with the Parmesan.  In a small bowl, combine the Gruyere, ham and spring onion and sprinkle it evenly in the bottom of your oven dish.  Combine the flour, baking powder and salt in your now empty bowl. Whisk in liquid, eggs, melted butter, mustard and nutmeg until smooth. Slowly pour batter over cheese and ham. Bake about 30 to 35 minutes in the lowest part of the oven until pie is golden and filling is set. Let cool about 10 minutes and slice. Serve warm.
Serve this pie as a substantial "hors d'oeuvre" by slicing it into
