Easy and Quick Shepherd's Pie Serves 4
1 teaspoon vege oil
1 medium onion, finely chopped
500g minced pork
1 tin Delmaines Black Beans in Chilli Sauce
2 - 3 tablespoons semi dried tomatoes, chopped
1 1/2 tablespoons Bittersweet So Savoury Blend
1/2 tablespoon Bittersweet Heathen Chili Blend
or similar (Tabasco Hot Sauce)
4 medium waxy potatoes
1/4 cup milk, warmed
25g butter, melted
50g tasty cheese, grated
salt and pepper to taste
Preheat oven to 180.
Heat skillet, add oil and cook diced onion for five minutes, until translucent (make sure they are soft). Add pork mince and brown. Add Black Beans, tomatoes and Bittersweet
spices and bring to heat. Place warm mixture into a casserole dish and top with Cheese-y Mashed Potatoes...
Cheese-y Mashed potatoes (for topping)
Scrub potatoes and cut into like size pieces (Leave skin on or peel, but remember peeling removes most of the goodness). Cover with cold water, bring to boil and simmer until done. Drain. Mash with warmed milk and melted butter and salt and pepper to taste.
Add half the cheese to the potato then cover the meat in the casserole dish with the potato mash. Top mash with remaining cheese. Bake for 20 minutes then brown top under broiler for five minutes or so. Watch carefully.
