Only Just The Best Mashed Potatoes Serves 4
4 large thin skinned potatoes, scrubbed and boiled
½ to ¾ cup sour cream, or ricotta or quarg (or use leftover party dip)
1 tablespoon Bittersweet Tarragon Blend*
Salt and pepper to taste
Mash warm potatoes (with skin, if you like). Stir in Bittersweet Tarragon Blend and add sour cream (or whatever you are using) to right consistency. Salt & pepper to taste.
Make a double batch and tomorrow make potato pancakes out of the leftovers.
