Yes, this easy recipe makes a tasty dip, but use it in the place of a carb serving to show off a salmon steak, some pork medallions or a grilled sliced tenderloin. It is four star restaurant material.
White Bean Dip
1 410g tin Cannellini Beans (Butter Beans) drained and refreshed
3 tablespoons extra virgin olive oil
2 tablespoons water
2 tablespoons lemon juice
1 tablespoon Bittersweet Tarragon Blend
Pinch cayenne pepper (optional)
Pinch of salt
Process all of the above in a food processor until smooth, about 45 seconds. Let stand at room temperature for at least 30 minutes. Season with salt and pepper to taste. If using as a dip drizzle with an additional tablespoon of olive oil before serving. If using to plate a main meat dish just spoon on plate and place fillet or steak on top.
