New Zealand coarse, solar harvested sea salt is from the fantastic salt beds in the Marlborough Sounds at the top of the South Island. It is harvested once a year around February or March when the weather is at it's driest and windiest. The amount harvested depends on these conditions being at their best so each year's "crop" is a bit different. The beds for this salt are specially chosen and the process of harvesting and processing this salt is different from other salt made in the area. This salt is as nature made it with no additives, no heating, no adulteration. The result is a sweet, clean taste of the sea. The crystals burst on the tongue then dissolve leaving a fresh, pure taste in the mouth. Table salt, on the other hand, leaves a lingering, metallic feel in the mouth.
